• Support the Waiter in the full set-up of the restaurant before each service, ensuring all tables, stations, and service areas are clean, well-presented, and fully equipped. • Prepare and maintain mis-en-place, equipment, and service items so they are correctly stored, readily available, and in line with company standards throughout the shift. • Assist the Waiter during all meal periods, following established service sequences to deliver a smooth, timely, and professional dining experience. • Ensure table settings, linen, chinaware, glassware, cutlery, and accessories meet brand, hygiene, and sanitation protocols at all times. • Be knowledgeable about the dining and beverage menus, including Japanese offerings, and proactively upsell and make tailored recommendations based on guest preferences. • Provide attentive support to guests with dietary needs or special requests, escalating to the Waiter or Supervisor when additional guidance is required. • Monitor the appearance and readiness of your assigned area, promptly correcting any issues that could negatively impact the guest experience. • Consistently contribute to achieving and exceeding service and guest satisfaction targets by embracing the Service Excellence standards. • Handle all equipment, tableware, and supplies carefully to minimise breakage, loss, and theft, and report any damage or shortages promptly. • Actively promote alternative dining venues, onboard experiences, and company initiatives in a helpful and authentic manner. • Accurately process guest transactions using shipboard devices and POS systems, following all company procedures and controls. • Collaborate effectively with teammates in a multicultural environment, supporting a positive, safe, and inclusive workplace culture.

• Graduate of a recognized Catering or Hotel Management School, or equivalent practical experience in restaurant service (preferred). • Previous experience in restaurant or fine dining service, ideally within premium restaurants, luxury hotels (5-star), or cruise ship environments. • Strong food and beverage knowledge, including the ability to explain menu items, ingredients, and preparation methods clearly to guests. • Confident describing and recommending wines, cocktails, and other beverages, including pairings with menu items. • Good understanding of public health, hygiene, and sanitation standards relevant to food and beverage service. • Comfortable working with POS and other shipboard systems to enter orders and process guest transactions accurately. • Excellent communication skills with a warm, professional, and guest-focused approach. • Fluent command of English and Japanese, both verbal and written, with the ability to hold natural conversations and assist Japanese-speaking guests. • Proven commitment to outstanding guest service, with the desire to anticipate needs and exceed expectations. • Highly motivated, reliable, and able to work calmly and efficiently in a fast-paced, high-volume service environment. • Strong interpersonal skills and the ability to build positive working relationships within a diverse, multicultural team. • Flexible, adaptable, and willing to learn, with a positive attitude toward feedback, coaching, and continuous improvement. • Physically able to stand for extended periods and lift or carry trays and service items in line with operational requirements.
